Why the Grinder Matters More Than the Machine
Ask most experienced baristas what to spend money on and the answer is almost always the same: the grinder. Assuming your machine can deliver stable pressure and temperature, a great grinder paired with a modest machine will produce better espresso than a mediocre grinder on a top-end machine.
The reason is simple. Espresso extraction depends on consistent particle size. If your grounds contain a mix of fine powder and coarse chunks, water over-extracts the fines and under-extracts the chunks. The result is a muddy, simultaneously sour and bitter shot. A good grinder produces a narrow, even particle distribution so that extraction is uniform across the entire puck.

What to Look For
Burr Type: Flat vs Conical
The two main burr geometries each have distinct characteristics:
Flat burrs produce a more uniform (unimodal) particle distribution. They tend to create shots with higher clarity, more distinct flavour notes and a cleaner finish. The trade-off is that they generate more heat (which can affect flavour at high volumes) and typically cost more. Most specialty cafes use flat burr grinders.
Conical burrs produce a slightly wider particle distribution with a bimodal peak. They tend to create shots with more body, a rounder mouthfeel and a more traditional espresso character. They run cooler, retain less coffee and are generally quieter. Most home grinders use conical burrs because of their lower noise and retention.
Neither is objectively better. It comes down to what you value in your cup.
Step Size and Adjustability
For espresso, you need very fine adjustment control. A grinder with only 10 steps across the espresso range will leave you stuck between settings. One click too fine and the shot chokes. One click too coarse and it gushes.

Retention
Retention is how much ground coffee stays trapped inside the grinder between doses. High retention means your next dose contains stale grounds from previous sessions, which muddies flavour and makes dialling in harder.
Low-retention grinders (under 0.5g) are strongly preferred for single-dosing, where you weigh your beans before grinding rather than using a hopper.
Build Quality and Burr Size
Larger burrs (54mm+) grind faster and produce less heat. Smaller burrs (38-50mm) are fine for home use but may slow down your workflow. Stainless steel burrs are standard. Titanium-coated burrs last longer but cost more.

Mid-Range ($300-$700)
Eureka Mignon Specialita
The Specialita is one of the most popular mid-range espresso grinders for good reason. It has 55mm flat burrs, stepless adjustment, low retention and near-silent operation. The timed dosing is accurate and consistent.

Cons: Stock burrs are decent but not exceptional. Build quality varies by batch. Requires some DIY alignment for best results. Clump crusher can be hit or miss.
